Many Pisan dishes are easily prepared with simple ingredients, so if for your holidays you have rented a villa in Pisa featuring a fully equipped kitchen, cooking some of them could turn out to be a very amusing experience. Therefore, in this page of our tourist guide we want to propose some specialities that you will not find in any other place in Tuscany.

The first dish we want to speak about is the cecina. The name of this thin pancake, or crêpe, of chickpea flour baked in the oven derives from its main ingredient: in fact, the Italian word for chickpeas is ceci. The cecina is an excellent appetizer or a snack, and tastes especially good stuffed into schiacciata all`olio (otherwise renowned in Italy as focaccia or pizza bianca).

Another typical Pisan titbit is the so-called torta co` bischeri, which is also known as "torta del 28". It is similar to an American pie and is filled with a mixture of rice boiled in milk, candied fruit, pine nuts, egg-yolk and plain chocolate. Why is it called "torta del 28"? Because it is especially produced in Pontasserchio on April 28th.

Our list of Pisan specialities could go on with the white truffle of San Miniato, the pecorino cheese of Volterra, the salami and ham produced on the hills, and so on.
